Sweet Potatoes with Bourbon Glaze - Candied Yams

Candied yams is always a Thanksgiving side dish in our home. It is one of my Mother's favorites, the makes them every year. No matter how they are made, it is always a great side dish. Sweet, savory and full of the Holiday flavors.



Ingredients:

4 Sweet Potatoes cut into 1 inch width pieces

1 stick of unsalted butter

Juice of 1 orange

zest of 1/2 orange

1/2 cup bourbon or whiskey

1 cup of brown sugar

1 tbsp ground cinnamon

1 tsp nutmeg

1/2 tsp cayenne pepper


Cooking Instructions:

In a large bowl, add in your sweet potatoes and drizzle a little bit of cooking oil. Stir the sweet potatoes to coat with the oil.

Season with salt and pepper and toss.

In a baking tray with parchment paper, add the sweet potatoes and spread out evenly.

In a preheated oven at 350 degrees, place the baking tray in the oven and allow to cook for 30 minutes before checking on them. If they are fork tender they are done, but depending on your oven, you may need to cook a bit longer.

Now start with your glaze, over low heat, add in the butter and melt slowly.

Once melted, add in the brown sugar, orange juice and bourbon.

Mix until sugar has dissolved.

Once the sugar has dissolved, add in the remainder of the ingredients and bump the heat to medium.

Allow the glaze to come to temperature and let the this cook for about 6 minutes or until the thickness you want. The longer you cook it, the more the liquids will reduce. Resulting in a thicker glaze which by all means can still be great for this recipe.

Coat the sweet potatoes with the glaze and mix well.

Let cook, you can serve hot or cold. Enjoy!
