Shrimp and Grits

Shrimp and Grits is a delicious meal for Brunch. Nothing say comfort food more than Shrimp and Grits. It holds many flavors coming from the cheesy grits and the beautiful shrimp that is pair with many flavors. This hands down is one of my favorite recipes.

Shrimp and Grits Recipe

1 cup of Grits

2 cups of chicken broth

2 cups of whole milk

1 tbsp butter

2 cups of sharp or mild cheddar cheese

Add your Chicken broth and milk into a pot and bring to temperature over low medium heat for about 5 minutes. Season with salt and pepper, you can add fresh chopped garlic or garlic powder to enhance the flavor. Increase heat to medium, slowly add 1 cup of grits while continuously stirring. Cook and slowly stirring for 5 mins or until the grits begin to feel like they are thickening. Once close to boiling point, reduce heat to low and cover and allow to cook for 5 additional mins. Uncover and turn off the heat. Stir your grits and add your butter and cheese. If you want a little more runny grits, you can add a little whole milk to it.

In a separate pan

3 – 4 strips of chopped bacon

1 quarter of a small onion chopped

1 tbsp or 2 chopped garlic

Cook your bacon for a couple of minutes before adding the onion and garlic. Once you see they are mostly cooked, add your onion and garlic and cook until the onion is translucent and bacon is nice and crispy. Remove from pan reserving the bacon fat.

1 tbsp of olive oil

1 tbsp of butter

½ cup of white wine

Shrimp of choice

Season of Old Bay or Cajun seasoning

Squeeze of a lemon

Add your olive oil and butter into the pan with the reserved bacon fat. Add ½ of a cup of white wine, and deglaze your pan. Allow the wine to cook off for a couple of minutes or reduced to about half. Place your shrimp into the pan and season with Old Bay or your favorite Cajun seasoning and squeeze with a half of a lemon. Cook for 2 ½ - 3 mins on the first side until the shrimp curl up and are nice and pink. Flip and cook for another 1 ½ - 2 mins until the shrimp is pink on the other side. Remove out of the pan and serve your shrimp and grits with all the ingredients and top with some of the sauce from the pan and fresh chopped parsley.

Enjoy!
