Potato, Egg and Chorizo Burritos


Making breakfast burritos on the Blackstone Griddle is such an ease. You can cook everything up and have it done fast. This is such an easy breakfast but comes out so delicious. I cook this pretty often and its always a delight. It’s a filling breakfast and will keep you satisfied for a while.



Potato Egg and Chorizo Burritos

5 medium potatoes cubed

6 eggs scrambled

6 strips of bacon sliced

1/3 of a tube of pork chorizo

Over medium heat on an oiled griddle, add your potato to start cooking. Season with Salt, Pepper, and Garlic powder. Cover and let cook checking every two minutes for 8 mins. Stir the potatoes around every time you check so you can get even cooking of the potatoes.

Once the potatoes are tender, move to the side and stir occasionally. Add your bacon and fry for a couple of minutes then add your chorizo.

Once everything is cooked mix your potatoes and bacon mixture.

Check seasoning and you feel it needs more salt and pepper, right now is the time you want to add it.

Now add your egg little by little while continue turning your potatoes.

Cook the egg and your filling is done.

Get you a nice flour tortilla that is soft but firm. You want to make sure the burrito will not break open.

Wrap your burrito and enjoy!
