Mexican Shrimp Cocktail - Coctel de Camaron

One of my favorite seafood dishes from Mexico is Shrimp Cocktail. It is a family staple and I love making it often. The best part is it is easy to do because all you are doing is prepping and assembling. This recipe does not require any cooking at all. I guarantee you, once you make this you will feel like you are on a trip to a local beach restaurant in Tijuana or Ensenada.

2lbs of cooked shrimp

2 cucumbers diced

½ onion diced

3 Roma tomatoes diced

1 cup of chopped cilantro

64oz Clamato tomato cocktail juice

¼ - ½ cup ketchup

¼ - ½ cup hot sauce of your availability (I typically use a Mexican hot sauce called Amor Picante)

Avocados for topping

Prepare all of your ingredients and add to a large mixing bowl.

Add in the Clamato and little by little add the hot sauce and ketchup.

You want a slight thick consistency, so add the ketchup a little at a time until you are happy with the consistency.

I like to let it sit for 1 hour to allow the cooked shrimp to absorb the flavor.

After 1 hour enjoy you a nice bowl of this delicious shrimp cocktail.
