
Macaroni Salad
Macaroni salad is a great side that goes well with many dishes. It is also great for parties when you need to make a lot. It has great flavor and adds freshness to a dish. I have macaroni salad a lot during the spring and summer, I pair this side with a lot of BBQ.
1 lb dry macaroni noodles
Half red onion (finely chopped)
4 celery stalks (finely chopped)
2 carrots (finely chopped)
1 cup parsley (finely chopped)
1 cup mayo
¼ cup apple cider vinegar
1 tbsp mustard
3 tbsp sugar
1 tsp salt
½ tsp black pepper
Cook your noodles in boiling water for 8 mins until al-dente. Drain and let cool to room temperature. Prep your other ingredients and make sure to chop finely. Once the pasta is cooled, mix all the ingredients and cool for 2 hours in refrigerator before serving.
