Slow cooker beef stew is such a delicacy and is really easy to make. You get some beautiful flavors in one bowl. The best part is it doesn’t take a lot to make. Pretty much a dump and go recipe, which I really like. This makes a great dinner and making a little extra doesn’t hurt for you lunch the next day.
Instant Pot Beef Stew
2 ½ lbs beef
½ onion chopped
2 carrots chopped
2 celery stalks chopped
2 large potatoes chopped
1 bag of frozen peas
½ cup red wine
1-2 tbsp corn starch
1 can of tomato sauce or 1 tbsp of tomato paste
4 cups beef broth
1 tbsp garlic powder
1 tsp salt
1 tsp black pepper
Brown beef on all sides, once browned remove beef.
Then add onions and tomato sauce and deglaze the bottom of the pan.
Add carrots, celery, potatoes, red wine and beef broth and place the lid on the instant pot.
Set to slow cook and set the time for 4 hours on high, 6 hours on normal, and 8 hours on less.
Pressure cook for 30 - 35 minutes with Pressure cook on Normal.
20 minutes before finishing on slow cook, add in the frozen peas, if using pressure cook add the peas at the end and sautee for 5 minutes.
Now add 1 – 2 tbsps of corn starch mixed with water to help thicken up. At this moment you want to check for seasoning to your taste.
