I love making some type of a seafood pasta, it does not feel guilty at all. It is not boring either, you can really pack some great flavors into this salad. It is fresh and flavorful, you will not regret making this on a Spring or Summer afternoon. You can eat this as a side or have as a meal.
20 oz imitation crab or crab
1 lb shrimp (chopped)
1/2 head romaine lettuce or small bag spinach
1/2 red onion
1 cup chopped cilantro
2 3.8 oz cans of sliced black olives
1/2 cup ext olive oil
1/4 cup white wine vinegar
4 tbsp Parmesan cheese
1 tbsp Italian seasoning
1 tsp garlic powder
salt n pepper to taste
cherry tomatoes cut in half
couple pinches of chili flakes
replace Italian dressing ingredients and add mayo and a bit of spicy mustard
This salad can be done in less then 30 minutes. Start with your pasta, its the only thing we are cooking in this. Get some salted water to a boil and cook your pasta for the lowest time on the directions of the box. It would usually ranged from 8 - 9 minutes.
While the pasta is cooking, prep your other ingredients and keep the cold ingredients cold if you can.
When the pasta is done, strain and rinse with tap water. You want to stop the cooking process.
Mix everything together in a large bowl, season with salt and pepper to taste.
