One of my favorite breakfast recipes is Huevos Rancheros. It’s a simple dish that usually has eggs sunny side up smothered in a delicious salsa. My Grandmother would make it different and add beef into it. She would serve this with some creamy smashed beans and top it with queso fresco. The best part was fresh homemade corn tortillas. I have cooked Huevos Rancheros like that all my life, I could not see myself not adding the beef into it. This recipe is filling and ultimately delicious, your family will not be disappointed.
Huevos Rancheros con Carne
1 lb Beef of your choice
1 -2 eggs per person
½ medium onion chopped
2 roma tomatoes / 1 large tomato
½ green bell pepper
½ cup chopped cilantro
3 garlic cloves minced
1 can tomato sauce / along with water using the tomato can
2 tbsp Chili powder of your choice or desired heat
Salt and pepper to taste
In a large pan or skillet, add some cooking oil and set to medium heat.
Add your beef cubes in and season with salt and pepper.
Brown all sides of the beef, stirring occasionally for 4-5 minutes.
Add the chili powder and mix into the beef well.
Now add the tomato, onion, bell pepper, cilantro and garlic.
Cook for several minutes until the onion become translucent and the tomato gets mushy.
Now add tomato sauce along with a can of tomato sauce filled with water.
Mix well and check for seasoning, add salt to taste.
Bring to boil while occasionally stirring.
Drop in your eggs and cover for 5-6 minutes until the eggs are cooked.
Serve with Corn tortillas and Refried beans
