Frijoles Puercos
Updated: Jan 7, 2020
Frijoles Puercos is an upgraded version of refried beans. It is a super easy breakfast that is packed with so much flavor. Frijoles Puercos are a great dip as well, so you can choose how you want to use this awesome recipe. Either way, you will not regret.
Frijoles Puercos
Ingredients
5 – 6 cups cooked Pinto Beans (can use canned beans)
5 slices of thick cut bacon sliced
1/3 tube of Pork Chorizo
1 lb of chopped smoked Ham
1 Jalapeno
½ cup of milk
Toppings
Homemade Salsa
Queso Fresco
Corn Tortillas
Cooking Directions
To start off, in a pan over medium heat, begin cooking the bacon. You do not want a really crispy bacon, just cooked to where it is brown.
Remove the cooked bacon and remove some of the bacon grease.
Now add your chorizo, cook the chorizo until it has broken up and looks pasty.
Add the beans and let the bean come to temperature.
When heated, smash the beans and then add your ham, bacon, jalapeno and milk into the beans.
Incorporate everything well and let the beans reduce down to your liking.
If you want a loose refried bean, cook less. If you want a thicker consistency, cook for more time.
If you are cooking down for thicker beans, continue to stir.
Once you have reached the consistency you like, remove from heat and serve.
Some of the best condiments I like for Frijoles Puercos are Queso Fresco, Homemade Salsa and Corn Tortillas.
Enjoy!
