Classic Potato Salad

A potato salad is the most universal side dish for comfort food. Its great with fried chicken, barbecue and much much more. You can pair this side dish with many things and is great for left overs. When I do a big cook on the grill, I have potato salad as a side dish.
Potato Salad Recipe
5 Large Potatoes
6 Large Eggs
1 half cup of chopped pickles
2 celery stalks chopped
¼ medium onion chopped
¼ cup fresh chopped Dill
5 tbsp of mayonnaise
2 tbsp of mustard
Salt and pepper to taste
Sprinkle of Paprika when done
Optional for a sweet potato salad: Sugar or instead of mayo use miracle whip
Boil your potatoes and eggs in some salted boiling water for about 25 mins or until the center of the potato is tender. Remove from water and allow to cool to room temperature. You can place the ingredients in Ice water to speed up the process. Once cooled, peel your potatoes and chop into square. Peel the eggs and remove the yolk from the egg white, then chop the egg whites.
Break down the egg yolk and begin to add all your ingredients and mix well. Season to taste, add more mayo to your liking if you want more of a runny potato salad and sugar if you are looking for a sweet potato salad.
Sprinkle with Paprika and Enjoy!
