
Chicken Tortilla Soup

Chicken tortilla soup is such an easy recipe to make. I love making one pot meals like this, they can be done in less than an hour. The depth of flavor on this soup is tasty and warming. This on a cold day will warm you up.
Ingredients:
2 lbs Chicken Thighs
1/2 Large Onion chopped
1 Bell Pepper chopped
3 Garlic Cloves minced
1 Jalapeno minced
1/2 bunch of Cilantro minced
14.5 oz can of Diced Tomatoes
14.5 oz can of Corn
14.5 can of Black Beans
1 Chipotle pepper with Adobo sauce added
3 Corn Tortillas
2 tsp Oregano
4 cups Chicken Broth
2 cups of Water
salt to taste
Topping options: Crispy tortilla chips, sour cream, cheddar or Mexican blend cheese, queso fresco, or crema
Cooking Instructions:
In a pot, add in the chicken broth and set the heat to medium high and let the broth come to temperature.
When the broth is hot, add in the chicken and let it cook for about 20 minutes or until the chicken is fully cooked.
Remove the chicken and shred.
Add in the can of diced tomatoes, jalapeno, garlic, oregano, chipotle pepper with a drizzle of the adobo sauce, tortillas and 2 cups of water.
Using a hand blender, blend the chipotle pepper and bits of tortilla.
Now add in the remainder of the ingredients and check for seasoning. Season with salt to taste.
Allow the mixture to come up to temperature and let cook for 15 to 20 minutes or until the peppers and onion are cooked.
