Chicken tinga tostadas are some of my favorite to make. You get tons of flavor in the braised chicken. Then adding condiments on top, providing more flavor and texture. This recipe is easy to make and the whole family will love it.
1 ½ to 2lbs of chicken 1 can 14oz diced tomatoes or 3 Roma tomatoes 1/2 small onion 2 garlic cloves 2 tsp oregano 1 tsp cumin 2 tsp Knorr's chicken bouillon 2 tbsp California chili powder 1 tbsp New Mexico chili powder 1/4 white wine or white vinegar 1 lime Topping options:
Refried beans shredded lettuce Mexican crema salsa avocados queso fresco or cotija
In a deep skillet or pan, add in tomatoes, onion and garlic. Bring the tomatoes to temp over medium heat. Once the tomatoes are hot, smash with a spoon or spatula.
Then add the remainder of your ingredients, and cook for about 4 to 6 minutes. This should be enough time to marry all the flavors together.
Now add your chicken above the sauce and braise for 30 to 35 minutes on medium low heat. Flip the chicken halfway of the cooking time.
Once done, shred the chicken and put back into the sauce.
