Brining chicken adds really good flavor to the meat but also keeps moisture in it. If you like to fry chicken, that chicken is so wonderful when you are done cooking it. It is flavorful and juicy, along with a nice crispy exterior. When I have time, I love to brine my chicken and it comes out fantastic every time.
1 1/2 to 3 pounds chicken legs and thighs
2 -3 lemons, sliced
3 bay leaves
4 -5 sprigs parsley
4 – 5 sprigs thyme
¾ cup clover honey
1 head garlic, halved
1 tbsp black peppercorns
1 cup kosher salt
1 gallon water
Add your water into a pot, bring to boil over medium heat.
Add all of your ingredients and let boil for 10 minutes.
Remove from heat, let the brine come to room temperature.
After the brine cools down, place in the refrigerator.
The day you plan on cooking the chicken, add your chicken to the brine and let marinate.
You can let the chicken sit in the brine for 4 to 12 hours. Do not go longer than 12 hours, it will over season the chicken.
