Chicken and Dumpling Soup
Updated: Apr 19, 2019
This is a hit home recipe for me, this was usually done in a pot by my Grandmother and Mother. I found using their same recipe in the instant pot to be so easy and made it just as good. I have gotten many comments about this recipe after posting it on Youtube. This is a must try. Also adding some potato as suggested by a follower, is a great option also.
Chicken and Dumpling Soup Recipe
Ingredients
2 large carrots chopped
2 celery chopped
2 large chicken breast cubed
¼ cup of flour
4 cups of chicken stock or broth
1 cup of whole milk
1 tube of packaged biscuits
1 tsp dried thyme
Salt and pepper to taste
Turn instant Pot on Saute, allow the pot to heat up and show Hot. When it is displays “Hot” you are ready to cook. Oil the pot and pour in your chicken. Be sure to stir occasionally, it will stick on you. Season with salt and pepper, and once the chicken is half way cooked add your carrots, onion and celery. Cook till onions are translucent and celery has been sweated. Add your dried time to the mixture. Add the flour in gradually and allow to cook for 2 – 3 mins. If it thickens up on your, add a little broth. Now add your broth and milk and incorporate everything and mix well. Be sure to de-glaze or scrape the bottom of the pot to prevent burning. Cut your biscuits into 4th’s and add them in. Seal the pot and vent, cook in pressure cook for 8 mins. Allow 10 mins to naturally release then force release.
Enjoy!
