Cheesy Hash Brown Casserole

One of my favorite side dishes that my family makes is a cheesy potato casserole. This side dish goes great with many things and is not just for Thanksgiving. The crispy edges are where it is at, you get a creamy interior with a crispy cheesy exterior, this side dish is so yummy. I hope you and your loved ones enjoy it.



Ingredients:

2 - 30 oz frozen hash browns

2 lbs cheddar cheese

1 lb sour cream

10 oz can of cream of chicken

butter to grease baking pan

salt and pepper to taste


In a large bowl, add in the sour cream and cream of chicken. Season with salt and pepper to taste. Cream of chicken does have sodium in it, so season to your preference. If you are on a low sodium diet, use low sodium or salt free for substitution.


Add in the hash browns and 3/4's of cheddar cheese. Mix well and ensure the sauce is coated over the hash browns and cheese.


In a 13x9 baking pan, grease the pan with butter.


Pour in the hash brown mixture, and spread evenly.


Cover with aluminum foil, raise the foil in the middle, so the foil does not stick to the top of the casserole.


In a preheated oven set to 350 degrees, cook for about 45 minutes until everything melts and gets bubbly. Rotate if needed, if your oven is not cooking even.


Once bubbly and melted, remove the aluminum foil and bake for another 15 to 20 minutes or until the top is golden brown.
