One of the best ceviche's I have ever eaten was homemade from my Aunt. I make ceviche often at home and it is really easy to make. This ceviche recipe is really fresh and makes a wonderful light meal.
Ceviche de Pescado
1 - 1 1/2 lb's of white fish fillets cut into small pieces
1 cucumber diced
2 roma tomatoes diced
1/2 small onion diced
1 jalapeno diced
1 bunch of cilantro minced
About 2 cups of lime but you will need enough to completely cover the fish. I usually just buy a pound or 2 of limes, and just use what I need.
Take your thinly cubed chunks of fish and place in a bowl. Add in enough lime juice to completely submerge the fish in the juice.
Place in the fridge for 30 mins, but if you want to be on the safe side, stir after 30 minutes and let it sit for 1 complete hour.
Remove some of the lime juice, and mix with your other ingredients.
Season with salt and pepper to taste.
You can add garlic powder, Clamato juice, tomato juice or even clam juice. I have done all of these options before, and they make some great ceviche.
Top your tostadas with your favorite toppings or serve in a bowl with crackers and your favorite condiments.
