Carne Guisado con Papa (Mexican Beef Stew)


Carne Guisado is a Mexican beef stew that screams delicious comfort food with fresh flavors and soft tender beef. Nothing better than a plate of Carne Guisado with sides of refried beans, Mexican fried rice and some fresh tortillas (Corn or Flour). You can eat this all by itself, it has wonderful flavors and is really filling. With a little bit a prep and easy cooking processes, you can have this dish on the table in a little over an hour.


Carne Guisado con Papas

3 lbs beef pot roast or stew meat

1/2 med onion

1 small bell pepper

2 Roma tomato

3 medium potatoes

2 tbsp minced garlic

2 1/2 cups water mixed with 1 to 2 tbsp beef bouillon or 2 1/2 cups beef broth

2 tbsp flour

1 tbsp new Mexico chili powder

2 tbsp California chili powder

1 tbsp oregano

1/2 tsp cumin

Salt and pepper

Over medium heat in an oiled skillet or sauté pan, add your beef into it. Season with a little salt and pepper and cook till all sides are browned. Once all sides are browned, sprinkle in the flour and mix into the beef. Once the flour is mixed in and the juices have a gravy consistency, remove from heat.

In an oiled larger pan or pot over medium heat, add your veggies (excluding potatoes) and sweat them down. After a couple of minutes add your garlic. Lightly season with salt and pepper.

After the veggies are sweated down and the onions are translucent, add your beef in. Now add your chili powders, oregano, cumin and water seasoned with beef bouillon.

Stir well and let come to temperature. Once the stew comes to a simmer, cover and turn the heat to low and cook for 30 mins.

After 30 mins check if you need seasoning and add your potatoes and let cook for another 30 mins covered.
