Caldo de Res - Mexican Beef Soup

Caldo de Res is a hands down staple for me when it comes to Mexican comfort food. It is really delicious and easy to make. It makes the family just enjoy this dish on any setting. This dish is really comforting and warming, I hope you enjoy it!



Ingredients:

2lbs Beef Shank or Chuck Roast

3 potatoes

3 carrots

2 corn

1/2 onion

2 - 3 Calabasita or Zucchini

1/3 bunch of cilantro

2 - 3 tbsp Knorr's Beef Bouillon

12 to 16 cups of water

Season your water with the Knorr’s beef bouillon, and add your beef into the cooking water.

Allow the beef to cook for about 40 minutes.

After the 45 minutes, add the potatoes, carrots, onion, and cilantro, allow those flavors to come together and cook some of those veggies. Give the potatoes and carrots about 10 to 15 minutes of cook time. Then add the remainder of your ingredients and let the squash cook to it is tender.
