Broccoli Cheese Soup
2 crowns broccoli chopped 1 large carrot shredded 1 lbs of cheddar cheese 1/2 large onion chopped 1/2 cup flour 8 tbsp butter 4 cups milk 2 tbsp minced garlic salt and pepper to taste
Add butter in a pot over medium heat and begin to melt
Once the butter is melted, add onion, garlic and season with salt and pepper.
Cook the onions for a couple minutes, just until they become translucent.
Now stir in ½ cup of all-purpose flour and cook for 2-3 minutes
Add in 4 cups of chicken broth and incorporate it into your flour mixture. It should be a little thick but end result should be smooth like gravy consistency.
Now add in another 4 cups of chicken broth and 4 cups of whole milk or 2 cups of heavy cream.
Bring to temperature and once boiling add in the broccoli and carrots.
Cook until the broccoli stems and florets are soft and tender.
Then add in your cheddar cheese, continue to stir until the cheese melts and incorporates evenly with the soup.
