Banana Nut Bread

Banana nut bread was always something great having as a child. My mother made this a lot and it was always a treat with a cold glass of milk. Now days I enjoy it with my morning coffee before I start my hectic day. It is simple to do and is a delicious treat. If you have banana’s that are getting over ripened, stick them in the freezer. You do not have to waste them by tossing them in the trash, save them for banana nut bread.

3 banana

1 tbsp lemon juice

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 tsp cinnamon

1/2 cup white sugar

1/2 cup brown sugar

1 stick of soften butter

2 eggs

1 tsp vanilla extract

1/2 milk

1 cup of walnuts chopped

In a large mixing bowl, add the flour, baking soda, baking powder and ground cinnamon. Mix the ingredients well.

In a separate bowl, add the bananas and lemon juice and mix together. Once mashed add the soften butter, white sugar, brown sugar and salt and mix together.

Back to the large mixing bowl, add the remainder of the ingredients and the banana mixture.

Mix on low setting for 2 minutes until the batter has a smooth consistency.

Grease and flour a bread pan and pour in the batter.

In a preheated oven set to 350 degrees, place your bread pan on the middle rack and let cook for 1 hour and 10 minutes.

Check the bread after 1 hour with a tooth pick or fork to see if it’s clean or has batter.

Remove from oven and let cool for 30 minutes

Slice and enjoy!
