Macaroni and cheese is a wonderful delicacy for a side. It goes well with almost any entree, and it screams homemade comfort food. If your a cheese fan like me, you will love this recipe. It is packed with gooey cheese and is very flavorful.
¼ cup Kosher salt
1 lb. dried elbow pasta
1/2 cup unsalted butter 1 stick
1/2 cup all purpose flour
1 1/2 cups whole milk
2 1/2 cups half and half
4 cups grated medium sharp cheddar cheese shredded
2 cups shredded mild cheddar
1 cup shredded parmesan cheese
1 cup of panko bread crumbs
1/2 Tbsp. salt
1/2 tsp. black pepper
Fill pot with water and turn on high heat and bring to a boil. Add ¼ cup of Kosher salt in the water, you want the water to be salty for the noodles. When boiling, add your noodles and stir occasionally. Cook the noodles for 5-8 mins depending on your preference. Remove and drain, do not rinse we want the starch on the noodles to absorb the cheese sauce.
In a sauce pan over medium low heat, add 1 stick of unsalted butter to melt. Once the butter is melted, slowly add ½ cup of flour while constantly stirring. Once all the flour is incorporated into the butter, cook for 2 -3 mins while continuously stirring.

Now add 1 ½ cups of whole milk and whisk. Then slowly add 2 ½ cups of half and half, mix well and cook for 3 mins to heat everything up. Once everything seems to start thickening up, season with salt and pepper and mix in.
Now gradually add 4 cups of sharp cheddar cheese into the sauce at a time. Mix thoroughly and make sure the cheese is not clumping up on the bottom. To prevent this from happening, just keep whisking. Once all of the cheese is incorporated, taste the sauce to determine if more seasoning is needed. Add salt and pepper to taste.
In a bowl with the macaroni, add your cheese sauce and mix thoroughly. You want to coat the noodles evenly with the sauce. In an oiled back pan, add your cheesy noodle mix and coat with more 1 cup cheddar cheese, 1 cup panko bread crumbs and 1 cup of parmesan cheese. Spread the top coating well covering the dish.
In a preheated oven to 350 degrees, cook for 25 – 30 mins uncovered or until the top crust is golden brown.
